I am hesitant to even call this a recipe, because these bell pepper pizzas are seriously the easiest thing to throw together. A few minutes to assemble, a few minutes to cook, and boom done!
I’m currently on a big bell pepper kick, so I’ve been adding them to so many dishes, and hence why I needed to pizza-ify them. You can use whichever bell pepper is your personal fave. I used to think green bell peppers were my fave but clearly was WRONG because wow the other colors are so much better.
These are great for a quick snack, an easy meal, an appetizer, whatever. I haven’t personally served these to kids, but seem like they would be a good easy meal to give to kiddos too! As long as they’re cool with peppers. Kids could also easily take part in the assembly process as well!
All you need for these bell pepper pizzas are bell peppers, obviously, pizza sauce, and cheese. You can of course add whatever toppings you prefer as well!
We used a variety of bell peppers, which I chopped into whatever way would make them lay the flattest. It worked out to be in thirds for most of them. I used whichever pizza sauce looked good at the grocery store. This one ended up being really good, but your personal fave would work here as well. We stuck with Kraft mozzarella, since it’s naturally lactose free (lactose intolerant liiiife). And pepperonis were my topping of choice, but any topping would be delish!

Ingredients
- Bell peppers of choice
- Pizza sauce
- Mozzarella
- Toppings of choice
- Spices of choice – salt, pepper, oregano, and red pepper flakes all are very delish options
To Assemble
- Chop your bell peppers to make them lay as flat as possible, and deseed.
- Spread as much sauce as you’d like
- Sprinkle on the cheese
- Add toppings
Seriously, it takes like 2 minutes to throw these together, if that.
To Cook
- Broil on high for 5-8 minutes, watching carefully
- Done when the cheese is melted to your liking!
They turn out much better when broiled versus baked. When you bake them the peppers turn out on the rubbery side. Broiling allows the peppers them to keep their crispness, while still cooking all of the ingredients on top! Bonus – you don’t need to preheat or anything!
