I’m always looking for quick and easy recipes to make so that I have meals ready to go. Especially ones that keep me full for a while! Even though I am lucky enough to work from home, my days are pretty busy and I rarely feel like I have the time to put a meal together during the day. Prepping meals the night before has been a game-changer for me, and ensures I’m eating healthy without having to take the time during my day to prep those meals.

Overnight oats in general are a staple for me because they are so quick to throw together. It takes me all of 2 minutes to throw it all into a jar or container, and by morning it’s a delish breakfast that’s going to keep me full and energized till lunch.

Between the oats and the chia seeds, there is plenty of fiber, which is what’s going to help keep you full for a while. Plus the healthy fats from the nut butter help with that as well!

If you’re not familiar with chia seeds, they are these tiny seeds soak up the liquid they are placed in and create this pudding like consistency. I really love them in these chocolate overnight oats because of the texture it gives the oatmeal, so creamy and thick. Perfect consistency! But they’re also good on their own as a chia pudding. Another staple make ahead breakfast of mine!

Once I started making these chocolate overnight oats I just couldn’t stop. They are so indulgent! Tastes like a dessert for breakfast while still being healthy and filling. And like I said, it takes maybe 2 minutes to throw these together. You can even prep these in advance for the week and make a few at a time so all of your breakfasts are good to go!

Ingredients

These of course can be changed to your preference, especially when it comes to toppings! This is what I use most often.

  • Oats – 1/2 cup (I prefer the NOW Foods oats because of the texture, better than store bought ones I’ve tried, imo)
  • Milk – 1/2 cup
  • Chia seeds – 1 tablespoon
  • Maple syrup – 1 tablespoon (this is to taste, add more or less depending on preference. Can be omitted or substituted out for another sweetener of choice.)
  • Cocoa powder – 1 tablespoon (this makes it VERY chocolatey. That’s my preference, but you can always start out with 1-2 teaspoons to see your preference, and add more afterwards)
  • Nut butter – 1-2 tablespoons
  • Optional: protein powder or collagen for protein
  • Toppings of choices: chocolate chips, banana, berries, cinnamon, chopped nuts or seeds, dried fruit, shredded coconut, the list goes on!

Measuring out oats.

I personally use almond milk to keep it dairy free and cashew butter because I am personally obsessed with it. SO CREAMY.

You can always add more milk if you’d prefer. I find this comes out to the perfect thickness, but that’s all up to preference! Sometimes I will add a splash in the morning and stir that in.

If you’d prefer to not add any sweetener, you can swap out the maple syrup for half of a mashed banana instead! It’s really good that way too! Another option is to add stevia – NOW actually has so many fun flavors of stevia, one of them being chocolate that I bet would be really good in these chocolate overnight oats!

Chocolate Overnight Oats Recipe

1. Measure and add all ingredients to a jar or container.

2. Mix it all together. The cocoa powder can take a little bit to fully dissolve and mix in thoroughly, but it will! Just keep stirring.

3. Set in the fridge overnight.

4. In the morning, give everything a quick mix, add your favorite toppings and take it on the go, or enjoy it at home.

It couldn’t be easier! If you have really early mornings and don’t have time to prep much, this is such a quick breakfast option to throw together the night before and grab with you on the go. Super easy meal to eat at your desk and requires no heating!

Love the convenience of these chocolate overnight oats. Whether I’m working from home with no time to prep a meal, or heading out to a coffee shop to get some work done, these are a great, filling option to bring along with me.
