We all can agree that one of the best parts of fall is the baked goods and treats that go alone with it, right?! Especialllllly those apple cider donuts you can get at the pumpkin patch! I was feeling very inspired by fall and all things apple cider and whipped up these DELISH apple cider stuffed donut holes. Not going to lie, very impressed with myself over this recipe.
Really these are more like apple pie filled donuts, but I liked the sound of apple cider stuffed better 😂 They kind of are apple cider stuffed since you cook the apples in apple cider!! Yum!

Anyways, these are easy to throw together and require minimal ingredients.
The trickiest part is definitely closing up the biscuits with the filling inside. Just make sure they are really flat, and you don’t over stuff. Then pinch up the sides and keep folding until it’s all sealed. After one or two you’ll get the hang of it!
Let’s get right into it!
Ingredients

- 2 medium-large apples (I used envy, but whatever your fave apple is will do!)
- 2 tablespoons cinnamon + a few more shakes
- 1/2 cup Sugar
- Can of buttermilk biscuits
- 1/2 cup apple cider + 1/2 cup for dipping
- Juice of 1/4 of a lemon
- 1 tbsp cornstarch + 1 tbsp water
Kitchen Items You Need
1. Air Fryer
The air fryer we have unfortunately isn’t sold anymore, but this air fryer is verrrrry highly rated on Amazon! Highly recommend having this appliance in your kitchen, I use mine daily!
2. Vegetable peeler
I have this set of 3 peelers and they are great! Have washed them a bunch of times and they are still super sharp and effective.
4. Flat spatula (or something to help flatten the biscuits)
This is the spatula I used (and use ALL the time. Love this spatula!) definitely worked well to flatten out the biscuits. But a rolling pin or anything else that would help you to flatten them out would be perfectly fine!
5. Saucepan
6. A few more…
A plate or baking sheet to lay out + flatten the biscuits, a knife to chop the apples up, mini whisk for the slurry and cinnamon sugar mixture (fork would work too), and a cutting board.

Apple Cider Stuffed Donut Holes Recipe
1. Peel and rough chop your apples into tiny little pieces, and add them to a saucepan with 1/2 cup of apple cider, lemon juice, and a few shakes of cinnamon. Simmer over medium heat stirring frequently for 15-20 minutes till apples are cooked to your liking.
2. Add the slurry (1 tbsp + 1 tbsp water mixed up) and let cook a few more minutes until it thickens up.
3. Set the mixture aside to cool.
4. Open up the can of biscuits (carefully!! does opening these up scare anyone else?!) and separate them out onto a baking sheet.
5. I cut them in half BUT I’m wondering if it might work better to separate them in half rather than cut and you’d have to flatten them out less. If I try that I’ll update!
6. Flatten out as much as possible.
7. Make cinnamon sugar mixture – add cinnamon + sugar to bowl and mix.
8. Once mixture is cooled, spoon some into the center of the biscuit. It was around half a tbsp of mixture.
9. Fold up the biscuit so the mixture is enclosed. Might take a donut or two to get the hang of it! I folded it in half and pinched together, then brought in the other sides and kept pinching till it was all closed up.
10. Dip in cider then add in a single layer to the air fryer.
11. Cook at 350 for 5-7 minutes.
12. Remove from air fryer and cool slightly.
13. Dip top of donut hole into cider then into cinnamon sugar mixture.
14. ENJOY!!!
15. Store extras in the fridge, they stayed for around 3 days and then I froze the rest. I preferred them cold the next day! But you could also reheat up for 10 second in the microwave or a minute or two in the air fryer.

You likely will have extra apple cider filling and cinnamon sugar leftover. Keep!! Both are yummy and can be used elsewhere.
If you’re ready for a fall explosion of flavors then you deffffffinitely need to make these! So easy and so delicious! Definitely an impressive treat that looks like you put a lot of work into these.
Just imagine, whipping these up with a cool breeze coming in the window!! That’s the dream right there.
If you make these, let me know how they turn out!
