Sharing one of my go to meals that can easily be made vegetarian with the use of meatless crumbles – burger in a bowl! It’s really easy to make, and so delish! Plus, it’s on the healthy-ish side as well, subbing cauliflower rice for regular rice so you’re getting some veggies in!
I’ve been wanting to share some food related things here on the blog, because I am food-obsessed and love to cook and experiment in the kitchen! Sorta felt like I couldn’t since I’m not a food blog, but oh well. Doing it anyways!
This is something I make pretty frequently, either just for myself, or in a bigger batch for dinners. We use ground meat for the bigger batches typically, but I like to eat some vegetarian meals, so if it’s just for me I use the meatless crumbles. Those honestly taste better than ground meat anyways since they’re already spiced!

It’s super easy to throw together, can be made all in one pan so you don’t need to get a bunch of pots and pans dirty, and doesn’t take long at all.
Plus, and most importantly, it’s really delicious! You can of course add any toppings you want. If I had lettuce on hand I would have thrown a bunch on top as well.
I use a scale to measure out my ingredients, but this is a recipe you could just eyeball how much YOU want and make it that way.

Ingredients
- 2 portions/100 grams MorningStar Farms Grillers Crumbles or ground meat of choice
- 2 portions/170 grams Cauliflower (either already riced – I really like the Trader Joe’s one, or florets that you’d have to chop or rice yourself)
- 1 portion/28 grams shredded cheese of choice (highly recommend Cabot – so GOOD and lactose free!)
- Ketchup – to taste, around 2-3 tbsp
- Mustard – to taste, around 2-3 tbsp
- Chopped pickles + pickle juice (Claussen is the best. Hands down.) – to taste
- Salt, pepper, garlic, onion – to taste, around 1 tsp each
- Whatever other toppings you’d want to add!

Recipe
- Spray cooking spray into the pain and brown the meatless crumbles according to the package.
- On medium heat add in the frozen cauliflower rice, stir until cooked – around 7ish minutes or so.
- Set some cheese aside, and stir in the rest until melted.
- Add in pickle juice, salt, pepper, garlic, onion, ketchup and mustard to taste. I totally just eyeball this and taste as I go. I’d say start with a tsp of each spice, and 2-3 tbsp of ketchup and mustard, and see how it tastes. And only a splash of pickle juice (+ a little more if you’re a pickle addict like me)
- Put it in a bowl and top with your remaining cheese, more ketchup and mustard if you choose, and chopped pickles.
- EAT!

If you’re making it in bigger batch, just double or triple it! When I make it for dinners, I will sprinkle the cheese on top and bake it in the oven for 20ish minutes at 350 to get the cheese melty. It’s a really easy dinner to throw together, Scott and I have this quite often!
Hope this gives you an idea of a healthyish meal idea that’s simple and delicious. If you decide to try it, let me know in the comments below, I’d love to know what you thought of it!
